MANGO/ SILKEN TOFU RAW CREAM
My dear friends, here, in La Réunion Island, it's mango time ! Let's get inspired by fresh seasonal fruits ! A perfect light dessert to impress your guests, also perfect combination for a healthy breakfast, or nurturing snack before a sport session.
Mix 3 ripe mangoes with a fresh lime juice and a piece of fresh ginger.
Boil 2 min a small amount of water with a pinch of Agar Agar, then, add to the "sauce". Fill some nice glasses (verrines) and let it stay for 15 min getting solid in the fridge.
Mix a pack of plain silken tofu with 3 spoons of raw chesnut purée, 3 spoons of honey, and some vanilla. Fill the glasses.
Sprinkle cinnamon on the top, serve cool.
